The name “pierogi ruskie” literally means “Ruthenian dumplings,” pointing to their roots in the medieval borderlands of the Polish–Lithuanian Commonwealth, especially in what is today western Ukraine (the historic regions of Galicia and Volhynia). “Ruthenia” (Ruś) encompassed East Slavic lands, and peasants there would fill simple unleavened dough with readily available ingredients - potatoes and white curd cheese—making a hearty, inexpensive meal.
